Daniel Ramos

Daniel Ramos is a renowned winemaker in the D.O.P. Cebreros region, based in El Tiemblo, Ávila, within the Sierra de Gredos. Originally born to Spanish parents in Australia, Ramos, often called “Kapi” (El Capitán), began his winemaking journey in Cebreros in 2005 with his wife, Pepi San Juan. His project, Bodega Daniel Ramos, focuses on expressing the unique terroirs of the region through old-vine Garnacha and Albillo Real, with some Sauvignon Blanc and minor varieties like Cheva and Jaen Blanco.

Starting with experiments in 2005, Ramos acquired 4.5 hectares of vineyards in 2007, expanding to about 15 hectares across diverse soils—granitic sandy soils and slate schist—at altitudes of 750–1,000 meters. His vineyards, some over 100 years old, are gobelet-trained and organically farmed, emphasizing minimal intervention.

Ramos produces two wine lines: Zerberos Finca, single-vineyard wines showcasing specific terroirs (e.g., El Altar, Dair), and , which honors traditional winemaking using concrete tanks, clay amphoras, and old oak barrels. His Garnacha wines are noted for freshness, acidity, elegance, and aging potential, while Albillo Real wines offer complexity and depth, ranging from crisp to orange styles.

Known as the “Garnacha whisperer,” Ramos combines old and new techniques, using native yeasts, slow maceration, and minimal sulfur, avoiding filtration to preserve purity. His winery, established in 2013 in El Tiemblo’s former cooperative, supports precise vinification. Ramos is a key figure in the Garnacha de Gredos (GdG) association, promoting organic farming and autochthonous varieties. His wines, like Zerberos Vino Precioso and Kπ Amphorae, are celebrated for their vibrant minerality, fruit, and spice, earning acclaim in natural wine circles.
